  • Yukon Gold potatoes (cut into 1.5-inch chunks)
  • Fresh rosemary
  • Fresh garlic cloves (minced)
  • Extra virgin olive oil
  • Low-sodium chicken broth
  • Lemon (zest and juice)
  • Dijon mustard
  • Salt and black pepper
  • Cornstarch (mixed with cold water for thickening)

Instructions

  1. Pat the pork loin dry and season generously with salt and pepper. Let it sit at room temperature for 15 minutes.
  2. Peel or leave skins on potatoes, cut into 1.5-inch chunks, and toss with a little olive oil.
  3. Heat olive oil in a cast-iron skillet over medium-high heat. Sear the pork loin for 2-3 minutes on each side until a deep brown crust forms. Remove and set aside.
  4. In the same skillet, sauté minced garlic and fresh rosemary for 30 seconds until fragrant. Scrape up browned bits.
  5. Place chopped potatoes in the bottom of a 6-quart slow cooker.
  6. Pour in chicken broth, lemon juice, and Dijon mustard. Stir to combine.
  7. Place the seared pork loin on top of the potatoes. Rub lemon zest and remaining herb mixture over the pork.
  8. Cover and cook on low for 6-7 hours or on high for 4 hours, until internal temperature reaches 145°F.
  9. Remove pork and let rest on a cutting board for 10 minutes.
  10. While pork rests, mix cornstarch with cold water and stir into the hot liquid in the slow cooker. Cook on high for 15-20 minutes until thickened.
  11. Slice the pork and serve over potatoes with the sauce spooned on top.

Notes

Searing the pork is highly recommended for flavor and texture. Do not overcrowd the skillet when searing. Cut potatoes into uniform chunks to ensure even cooking. Pork is done at 145°F; let it rest to redistribute juices. Leftovers store well for 4 days or can be frozen.
